Then place your filling around your pie funnel and gently drape the pastry over the top of the pie. Finally, push down on your pastry to allow your Pig figurine to be completely visible- this is the most important part as this is the secret to ensuring a crisp-golden crust. By doing this it allows all the built-up excess steam to leave your pie through your pie funnel, turning your crust crisp and allowing your filling to bake rather than stew and become watery.
